500g fine sugar

Method

Making the Cordial: Put all the components inside a pot, bring to a light boil, agitating so the sugar melts. Next, turn off the burner allowing it to cool down fully. Pour to a clean bottle, seal and refrigerate it chilled, where it will keep for up to four weeks.

To make Premix: Combine all the liquids into a large bottle, leave to sit for one hour, then filter it preferably using muslin, to ensure it's fully clarified.

To serve: Add 85ml of your premix into a cocktail shaker containing ice, and stir carefully for one minute to cool it down. Pour into a chilled martini glass or similar, top with some cranberries adding the final touch using a quick spritz of the essential oil over the top.
